Restaurant calories vs what’s on the plate

Lab measurements of restaurant food find the average dish close to its stated calories — and one in five at least 100 kcal over. Here is what a menu number can tell you, what it cannot, and how to log around the gap.

What the lab scales found

For a study published in 2011, researchers bought 269 dishes from 42 US restaurants and measured their energy content in a lab. The average dish came in about 10 kcal above its stated value — close. The spread was the story: 19% of dishes exceeded the menu figure by at least 100 kcal, and some by several hundred. The average was accurate. Individual plates were not.

The direction of the error was not random. Dishes with low stated calories — the ones ordered by people trying to lose weight — tended to contain more than the menu said, while high-calorie dishes tended to contain slightly less. An earlier test of meals sold as reduced-calorie found the restaurant versions averaged 18% more energy than stated; frozen supermarket diet meals ran just 8% over. The gap concentrates exactly where it does the most damage.

Why menus drift

A menu calorie count describes a reference recipe, weighed once, in a test kitchen. Your plate was assembled by a person, at speed, on a Friday night. A tablespoon of olive oil is 119 kcal; a heavy hand with two of them adds about a chocolate bar. US labelling rules tolerate roughly 20% deviation, and enforcement testing is rare. The number was never a measurement of your food. It is a description of what your food was supposed to be.

Standardisation decides the size of the gap. Fast-food chains, with pre-portioned components and central specs, tracked their stated values most closely in testing. Sit-down restaurants, where plates are built by hand, drifted further. And the stated figure usually excludes what arrives free: bread, butter, dressing poured at the table. None of that is on the menu, so none of it is in the number.

What the number cannot tell you

A menu calorie is a central estimate with an unprinted error bar of roughly ±20% — wider for generous kitchens. It cannot tell you what is on your plate tonight. It can still rank the menu: a 550 kcal dish versus a 1,200 kcal dish is a real difference that no plausible portion error erases. Use it to choose between options, not to balance a daily budget to the nearest 50 kcal.

Logging around the gap

Log the closest match and accept the uncertainty. One restaurant meal mis-logged by 150 kcal is noise; the same bias repeated four nights a week is 600 kcal, and that shows up. The audit is not the log — it is the scale. If your weight trend rises while your logged intake says it should not, restaurant estimates are the usual suspect. Adjust the estimates upward, not your confidence in the trend.

Pick the nearest catalogue entry and move on. A ±20% error on one meal is noise; an unlogged meal is a hole.

Count the free extras

Bread, butter, table oil, dressing, the second drink. They are rarely in the stated figure. Log them separately.

Testing found larger gaps where portions are hand-plated. If the plate looks generous, it probably is — add 10–20%.

Weeks of a rising 7-day weight average against a flat logged intake means your estimates run low. Raise them.

Quick answers

Are menu calories legally required to be accurate?

Large chains in the US must post calories, and calorie labelling has been required for large food businesses in England since April 2022. Both regimes tolerate meaningful deviation — US rules allow roughly 20% — and routine enforcement testing is rare. The law makes the number exist; it does not make your portion match it.

Is it still worth logging restaurant meals?

Yes. An estimate with ±20% error beats a blank entry, which your daily total silently treats as zero. Logging errors on occasional meals wash out; skipped meals do not. If you eat out often, consistency matters more than precision — a stable bias can be corrected once your weight trend exposes it.

Is fast food more accurate than sit-down dining?

In lab testing, yes — chains with standardised, pre-portioned components matched their stated values more closely than sit-down restaurants, where plates are assembled by hand. That is a statement about accuracy, not health. A precisely stated 1,400 kcal burger meal is still 1,400 kcal.
